The Arienzo beach is also known as the “300-steps beach,” because that’s the number you’ll be counting down (and back up!) to reach it from the Strada Statale main road. The walk down is fantastic, since the switchback ramps are immersed in perfumy greenery, and from here you can peek into some of the Amalfi Coast’s most luxurious villas hidden in the verdant corners of the mountain.
The beach has a free section, as well as a lido that rents out beach chairs, sunbeds and brightly colored umbrellas. Given its southwest exposition, Arienzo is also the one Positano beach that enjoys the longest amount of sunlight past 6 p.m.
Driving out of Positano headed towards Amalfi, pass Hotel San Pietro and keep going for another 800 yards until you reach the stairs down to Arienzo beach. If stairs are not your thing, there is also a nifty boat shuttle service from Positano and Praiano.
I love lemon desserts. The bright, citrus flavor just makes my whole day better and lights up my mood. I’ve seen lemon desserts done in magically delicious ways and I’ve seen them leave me puckering so hard I thought my face would stay that way. This lemon drop cookie recipe is the former. Sweet lemon glaze coats and not too sweet biscuit-like cookie for a perfectly balanced bite of citrus you’ll crave!
COOKIE RECIPE
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ cup sugar
¼ cup unsalted butter at room temperature
1 egg
¼ teaspoon vanilla
2 tablespoons lemon juice (1 to 2 lemons)
1 tablespoon lemon zest (1 lemon)
⅓ cup milk
GLAZE
1 ½ cups powdered sugar
2 tablespoons unsalted butter at room temperature
1 ½ tablespoons milk
1 tablespoon lemon juice (1/2 lemon)
½ tablespoon lemon zest (1/2 lemon)
INSTRUCTIONS
COOKIES
Heat oven to 375 degrees F.
Combine flour, baking powder, and salt in a medium mixing bowl. Set aside.
In a large mixing bowl, beat together the butter and sugar for 1 minute or until pale and fluffy.
Add the egg and vanilla to the butter mixture. Beat until combined and smooth, scraping the sides of the bowl as needed. Add the lemon juice and lemon zest and mix to combine.
Add half of the flour mixture to the butter mixture and mix until just incorporated. Add the milk and mix to combine. Add the remaining flour mixture and mix until completely incorporated. The dough should be the consistency of a very thick, sticky cake batter.
Use a small cookie scoop (about 1 tablespoon) to portion the cookie dough onto parchment paper or silicone mat lined cookie sheets.
Bake for 11-13 minute, or until the bottom edges are golden brown.
Carefully remove from the oven. Transfer the cookies to a wire rack to cool completely.
GLAZE
In a medium mixing bowl, beat together the powdered sugar, butter, milk, lemon juice, and lemon zest until smooth.
Place the wire racks (with the cookies one them) over some foil or over a baking sheet.
Use a spoon to top each cookie with a heaping teaspoon of frosting. Use the back of your spoon to spread the glaze all over the cookie. Return the cookie to the wire rack and let the frosting finish coating the cookies. Let set until the glaze firms up a little, about 15-20 minutes. (The glaze will not set up completely, but will stop dripping down the cookie.)
Serve immediately or store in an airtight container until ready to serve.
NOTES
If you glaze looks too thin, you can add more powdered sugar a tablespoon or two at a time. If it looks too thick, add milk a teaspoon or two at a time until your desired consistency is reached. This is a glaze, not a frosting, it should be on the runny side.
You can add more lemon juice and zest to the glaze if you prefer a stronger lemon flavor.
If you like, you can drizzle or spoon the glaze over the cookies while they’re sitting on a wire rack. I usually dip the tops and put them back on the baking sheet to set up.
Make a swim into the crystal emerald water inside the green grotto
Visit the characteristic Capri town
We will sail first along the beautiful coast to reach Capri, passing in front of Positano. Once arrived in Capri the tour of the Island begins discovering the white grotto, then proceeding ahead to see the natural arch and the faraglioni rocks. Once we reach the green grotto, you may plunge into the crystal emerald water. Later we’ll reach “Marina Piccola” where you may eat in a typical restaurant and visit the center of Capri town, easy to reach just in 5 minutes by taxi. On the way back we’ll pass through “Li Galli island” before back in Praiano.
Step 1In a medium skillet over medium-low heat, heat oil. Add garlic and cook, stirring occasionally, until lightly golden, 2 to 4 minutes. Let cool.
Step 2Meanwhile, set a large strainer or colander over a bowl. Add tomatoes and toss with 1/2 teaspoon salt.
Step 3Let sit 5 minutes. Transfer tomatoes to a large bowl. Add basil, vinegar, crushed red pepper flakes, and 1/2 tsp. salt and toss to combine. Add garlic and oil from skillet and toss again to combine. Let marinate at least 30 minutes or up to 2 days
BREAD & ASSEMBLY
Step 1Preheat oven to 400°. Brush bread on both sides with oil and arrange on large baking sheet.
Step 2Toast bread, turning halfway through, until dried and golden brown, 10 to 15 minutes. Let cool 5 minutes, then rub one side of bread with halved garlic cloves.
Step 3Arrange bread on a platter, spoon tomatoes on garlic-rubbed side of bread just before serving .
BRUSCHETTA
BRUSCHETTA al CAPRESE
1. To make Bruschetta al Caprese, just get some good fresh Mozzarella, and cut it into 1/4″ cubes. Mak the above recipe.
2. Just before serving, add the diced Mozzarella to the Tomato mixture and gently mix.
Top the toasted bread with Tomato, Basil, & Mozzarella, and serve.
SHRIMP & TOMATO BRUSCHETTA
Make the above recipe for Tomato Basil Bruschetta.
Cook a 1/2 pound of cleaned shrimp, either by poaching, grilling or sauteing.
After cooking the Shrimp, cut in half down the middle.
